Today I made beet fried rice 🙂 The rice turned red from the beets pigment! Too pretty to eat 🙂 Not your average Asian fried rice. The beets not only add pretty color pigment, it adds amazing sweet flavors to the rice too!
2 organic beets
beets greens (based on personal preference)
3 organic mini carrots
1/4 cups of organic sweet onion
Serve 4 people
- Cook the rice
- cut carrots, and beets into cubes , shred the beets green and cut onion into small pieces
- Once the rice is done, add the beets, onion, carrots and greens into the same cooking pot (rice cooker or on the stove) and stir it
- add a splash of soy sauce and stir everything
- cook it for about another 15 minutes
Beets have many great health benefits. It may help lower blood pressure, boost stamina (source of energy), fight inflammation, contains anti-cancer property, help support mental health, support detoxification and much more. It is rich in folate, manganese, potassium, copper etc. High in fiber and loaded with antioxidant.
For those who are wondering how much to drink to see effect on lowering blood pressure? According to Dr. Oz, one to two cups juice a day have been shown to have a significant effect for lowering blood pressure.
