Today I made healthy beet fried rice 🙂 The rice turned red with the beets pigment! Too pretty to eat 🙂 Not your average Asian fried rice. The beets not only add pretty color pigment, it adds amazing sweet flavors to the rice too!
2 Organic Beets
1 Cup Beets greens (based on personal preference)
3 Organic mini carrots
1/4 Cups of organic sweet onion
1 Teaspoon Soy sauce
1 Cups Jasmine rice
Serve 2 people
- Cook the rice
- cut carrots and beets into cubes shred the beets green and cut the onion into small pieces
- Once the rice is done, add the beets, onion, carrots, and greens into the same cooking pot (rice cooker or on the stove) and stir it
- add a splash of soy sauce and stir everything
- cook it for about another 15 minutes
Beets have many great health benefits. It may help lower blood pressure, boost stamina (source of energy), fight inflammation, contains anti-cancer property, help support mental health, support detoxification and much more. It is rich in folate, manganese, potassium, copper etc. High in fiber and loaded with antioxidant.
