Maple glazed beets, potato and carrots

IMG_6515I’m NOT a beets fan, they just taste weird…Beets has many great health benefits, therefore, I am willing to give beets a chance. How about you?

Beets is rich in folate, manganese, potassium, copper etc. High in fiber and loaded with antioxidant.

Beets have many great health benefits. It may help lower blood pressure, boost stamina (source of energy), fight inflammation, contains anti-cancer property, help support mental health, support detoxification and much more.

Recently I came a cross a maple glazed roasted vegetable IMG_6516recipe and decided to give it a try. Turned out I loved it and cant get enough!


3 organic orange carrots

2 finger potato

2-3 beetroot

2 teaspoon Organic cinnamon

1 tablespoon of maple syrup

Himalayan salt


  1. Peel and cut all the vegetable into cubes
  2. in a bowl, mix the vegetable with maple syrup, olive oil (enough to cover all vegetable), a pinch of himalayan salt, cinnamon and maple syrup
  3. Spread the mixed vegetables in a pan and bake it at 400 degree F.
  4. Roast the vegetable for about 30-40 minutes. Recommend to stir it at 15 minutes.
