Tofu is one of my favorite food that pack with protein and calcium!
Todays lunch, pesto tofu scramble!
Firm tofu (or silky if you prefer)
Pesto Habanero (I got from farmers market)
Organic micro greens ( got from farmers market)
1. Scramble Tofu until its hot
2. Pour pesto and mix it with tofu while turning the stove off
3. Once you mixed the tofu with pesto, put the micro green on top (do not heat the micro green, as it will destroy the vitamins it packs)
