Satisfying Healthy Snack with Rainbow Carrots and Hummus

One of my favorite healthy, guilt-free snack when I’m bored and want to keep my mouth busy, is carrot and hummus.  We all have those days where we just want something to keep our mouth busy but we are not hungry. Total boredom and mindless eating. What do you typically go for in such situation? Crackers, rice cakes, chips, popcorn, ice cream…. sound about right? IMG_3049Sometimes we feel bad after eating those because we know they are not good for our body or they simply just don’t satisfy us. I know that is the case for me.

Next time when you are in the store, grab some rainbow blend baby carrots instead of your typical orange carrots. It is crunchy, sweet and satisfying naturally. Low calories and guilt free!

We are trained and taught that carrots are only available in orange. Wrong, in many Country, carrots come in varieties of color. Red, purple, white and yellow.

What are the difference amount the color?

Orange: beta and alpha-carotene pigment. This promotes vitamin A product by our body and it is great for eye health.

Purple: anthocyanin, beta, and alpha-carotene pigment. Provides vitamin A and prevent heart disease.

Red: lycopene and beta-carotene pigment. Lycopene is the same red pigment as tomato and is linked to lower risk of certain cancer.

Yellow: Xanthophylls and lutein. Both are linked to cancer prevention and better eye health.

White: loaded with fiber and promotes healthy digestion.

Hummus: 

If you don’t know what hummus is, it is a Middle Eastern dip made with chickpeas, olive oil, garlic, lemon juice and tahini.

Hummus is loaded with protein, fat ( good fat) and fiber so it will keep you full. Hummus will also give you a number of essential vitamins and minerals while keeping you satisfied!
