Ingredients
  • 1Cup Fingerling potatoes
  • 1Cup Sunchoke
  • 3Whole CarrotOrganic
  • 3Tablespoon Extra virgin olive oil
  • 1Tablespoon Sumac
  • 1Teaspoon Himalayan Salt
  • 3Cloves garlicFresh
Instructions
  1. Peel Fingerling potatoes and sunchoke (optional)
  2. Wash and slice carrot in half.
  3. In a baking pan, place sliced carrots, potato and sunchoke.
  4. Drizzel the olive oil into the pan.
  5. Sprinkle himalayan salt and sumac on top.
  6. Bake at 350F for ~30 minutes.
