Healthy Open Face Omelet

IMG_7393Open face organic omelet to start the day! mmm… What a great way to start the day with protein, fresh and organic veggies and not mentioning the beautiful color!


4 Mini organic radish

1 Mini organic carrot

3 Organic beet greens

4 Organic Eggs

Coconut oil

Serving: 2 omelet


  1. cube the carrots and radish. Slice the beet greens.
  2. In a pan, melt about a small spoonful to cover the surface of the pan and turn the stove on to medium heat
  3. Beat 2 eggs and pour it into the warmed up pan
  4. sprinkle the vegetables on top

Tip: make sure the bottom doesn’t get burned and tilt the pan to cook any extra uncooked egg.
