Homemade Kimchi Soup with Green Tea Noodle

I love kimchi noodle soup! It keeps me warm during the cold weather and it hits the spot. It is very easy to make and its full of flavor! The perfect, simple to make comfort food that anyone could ask for.

One of my must-have ingredients is an egg! Cant complete the dish without an egg.


4-5 organic full baby bok choy

soy sauce


  1. Boil about 5-6 cups of water (depends on how much soup you want
  2. once the water is boiled, add kimchi and noodle (based on personal preference)
  3. add the bok choy and egg 1 minute before the noodle is done.
  4. when everything is cooked, add a splash of soy sauce

This organic cha soba green tea noodle is one of my favorite noodle for my Asian cooking. Yep! It’s green tea noodle and its 98%fat free! It’s certified organic and kosher! yummmm!

When looking for green tea noodles, read the back of the package carefully.  Some products may contain green food coloring to obtain a bright green color.  Food coloring does not belong in any food product so stay clear of it.  Also, some noodles contain white wheat flour instead of buckwheat flour, which will result in a brighter green color.
