Vegan Mashed Sweet Potato With Raisin and Marshmallow Pie

One of my favorite dish from this year’s Thanksgiving was this vegan mashed sweet potato with raisin and marshmallow! What we have here is a technique for making mashed sweet potatoes that are so sweet, rich, and packed with sweet-potato flavor, they need only the simplest of embellishments to shine.


Serves: 8 -10

5-6 Sweet potatoes (~2 lbs)

1 Teaspoon of organic cinnamon

1 Cup of raisin

Vegan Marshmallow

1/2 teaspoon salt

Pecan (optional)


  1. Cut sweet potatoes into cubes and boil until soften (10-15 mins). Peel the sweet potatoes once it’s cooled down.
  2. Mash the sweet potatoes in a bowl and then add cinnamon, raisin, and salt.
  3. Pour it into 8 inches square pan and bake it in 350F for about 20 minutes.
  4. Add marshmallow on top and bake it for about 10 minutes. Be sure not to burn your marshmallow!

Sweet potato is loaded with vitamin A, C, potassium, and phytochemicals like lutein and zeaxanthin, which promote eye health… Loaded with fiber!
