Vegan Veggie Fried Rice

One way for us to reduce carbon footprint today is to reduce our food waste. You can reduce your food waste by being a smart shopper, mindful eater and save your food.

Let’s face it, we all dine out and takeout. Last night we had Thai food and had leftover rice so we bag it! So today, I decided to make us some vegetable fried rice :p

Ingredients:

1 Cup Rice

2 Organic Zucchini (green and yellow)

Carrots

Peanuts (optional)

Soy sauce

Organic sweet onion

Directions:

  1. Cooked the rice
  2. Stir fry the vegetable in soy sauce and peanuts.
  3. Mixed rice with vegetable.

Storage and Shelf Life:

Recommend store in the fridge for no longer than three days. Do not recommend reheating over more than once.
