Winter Soul Food with Maple glazed Beets, Potato and Carrots

I’m NOT a beets fan, they just taste weird…Beets has many great health benefits, therefore, I am willing to give beets a chance. How about you?

Beets have many great health benefits. As it is rich in folate, manganese, potassium, copper etc. High in fiber and loaded with antioxidant. It may help lower blood pressure, boost stamina (source of energy), fight inflammation, contains anti-cancer property, help support mental health, support detoxification and much more.

Beets are one of winter’s sweetest treats. This root vegetable, which is harvested all summer through late fall, stores well and keeps for months. While mature both golden and red beets have an earthy, bitter flavor raw, they turn candy-like when roasted, grilled, or steamed.

Recently I came across a maple glazed roasted vegetable recipe and decided to give it a try. Turned out I loved it and can’t get enough!



3 Organic orange carrots

2 Finger potato

2-3 Beetroot

2 Teaspoon Organic cinnamon

1 Tablespoon of maple syrup

Olive oil

Himalayan salt


  1. Peel and cut all the vegetable into cubes
  2. In a bowl, mix the vegetable with maple syrup, olive oil (enough to cover all vegetable), a pinch of Himalayan salt, cinnamon and maple syrup
  3. Spread the mixed vegetables in a pan and bake it at 400 degrees F.
  4. Roast the vegetable for about 30-40 minutes. Recommend to stir it at 15 minutes.
