Are you all about the beets? I know I am now! I love everything about beets: the color, the sweet taste and of course the health benefits of consuming it. Growing up in China, I was never exposed to beets until 2 years ago when I lived in Vermont and had beet stew. I remember the stew was dark purple,  almost reddish. Scary looking but pleasant to look at. I remember the beets tasted very earthy like I was eating dirt and grass but there was some sweetness to it as well. When I learned beet is a superfood, I started to expose myself to more and more beets.

If you aren’t familiar with beet, beetroot is the taproot portion of the plant and it is available in purple, red or golden color. The taste of beetroot is sweet with an earthy flavor to it. The green portion of the beet or the leaves is known as beet greens.

Beets offer many health benefits:

  • Drinking beet juice can help lower blood pressure. The nitrates in beet get converted into nitric oxide in the body and nitric oxide will help relax and dilate your blood vessels, which will improve blood flow and lower blood pressure.
  • Drinking beet juice prior to exercise can boost your stamina. The turning of nitrates into nitric oxide may reduce the oxygen cost of low-intensity exercise as well as enhance tolerance to high-intensity exercise.
  • Beets are a unique source of betaine, a nutrient that helps protect cells, proteins, and enzymes from environmental stress. It is known to help fight inflammation, protect internal organs, improve factors, enhance performance, and likely help prevent chronic disease.
  • Beets contain powerful phytonutrients that give beets their deep color which may help to ward off cancer.
  • Beets are rich in vitamin C, fiber, and essential minerals like potassium and manganese.
  • Beets contain betalain pigment which supports body’s phase 2 detoxification process
  • Beets contain a significant amount of carbohydrates which will provide fuel for energy.
  • When you feeling low, beets can take you higher! Beet contains betaine- the same substance used in treating symptoms of depression!

Conclusion: beets contain many amazing health benefits and it is time to get on with beets!

Fresh beets are available in the grocery store from June to October. Beets prefer the cool weather of Spring and Fall but it is mostly a Fall crop.  So what should we do when beets are not available to us during offseason? I don’t know about you but I get beets from Love Beets!
