Ingredients
  • 2260g Udon NoodleI use frozen
  • 2-3tbsp Cashew butter
  • 5tbsp Hot water
  • 1tbsp Balsamic Vinegar
  • 2Clove garlic
  • 1/2lb Shrimp
  • 1/8Cup Frozen Peas
  • 1/8Cup Frozen Corn
  • 1tsp Himalayan Salt
  • 1 tsp Hot sauceoptional
  • 1tsp Everything bagel sprinkleoptional
  • Avocado OilFor sauteed
Instructions
  1. Boil udon noodle according to direction.
  2. In a stir fry pan, sauteed garlic in avocado oil and then throw in the deveined shrimp. Add salt.
  3. Let the shrimp cook until close to being fully cooked then throw in the frozen corn and peas.
  4. In a serving bowl, mix the cashew butter with hot water from the udon broth. Mix until smooth. If you want to a creamier sauce, you can either use less water to thin it out or add more cashew butter.
  5. Once the cashew butter is thin down and it is smooth, add balsamic and siracha. Mix well.
  6. Add cooked udon noodle and mix well.
  7. Once the shrimp is cooked, add on up of the udon. Shrinkle some “Everything bagel” topping for some fun texture and taste.
