Pumpkin Swirl Brownie
Prep Time 15 Minutes
Cook Time 40 Minutes
- Preheat oven to 350F. Line a 9x9 baking pan with foil or parchment paper. Spray or pour the bottom of the pan with some oil so it doesn't get stuck.
- With an mixer, combine sugar, vanilla extract, and eggs and beat until combined. Then add in flour, baking powder and salt and stir until combined.
- Divide egg, sugar and flour mixture evenly into two bowls. One for chocolate and one for pumpkin. See below for instructions.
- Layer pumpkin and brownie batters into the 9x9 pan, and use a knife through the batter in a zig-zag motion to create the swirl. Bake for approximately 40 minutes or until a toothpick inserted into the center comes out almost clean. Allow to cool on a wire rack prior to serving.
- Melt ghee/oil and chocolate together and stirring until smooth and fully melted. You can also add cacao powder in if you decided to use it.
- In the other bowl, add pumpkin, oil and spices to the mixture and stir until combined.
