Okay, maybe that’s a bit of a stretch, but I won’t question it if you don’t.

I can think of about so many reasons to make these pumpkin swirl brownies. But you really don’t need a reason or an excuse. Just make them because it is Fall! That’s a good enough reason for me!

What I LOVE about making these brownies in the Fall is all the access we have to fresh pumpkins. Why not take advantage of it! If you like carving pumpkins, then this is an excellent way of using the pumpkin after you gut it — more reason to make these pumpkin swirl brownie.

How to store left over pumpkin swirl brownie?

If you have left over brownie, I recommend you store these guys in the fridge to keep the pumpkin as fresh as possible. Especially if you are using fresh pumpkins. 

Pumpkin Swirl Brownie

Ingredients

Main Batter:

1/2 Cup Of Avocado Oil Or Ghee 
2 Cup Of All Purpose Flour
2 Tsp Vanilla Extract
1 Teaspoon Of Baking Powder
1 Cup Of Brown Sugar
4 Eggs
1/2 Teaspoon Pinch Of Himalayan Salt

Brownie Batter:

4 oz of Dark Chocolate Chips
1 Tablespoon Cacao Powder (Optional)

Pumpkin Batter:

1 teaspoon of cinnamon
1 Teaspoon of Pumpkin Pie spice (Optional)
1- 1/2 cup of fresh mashed pumpkin (can use 
pumpkin puree)

Instructions

  1. Preheat oven to 350F. Line a 9x9 baking pan with foil or parchment paper. Spray or pour the bottom of the pan with some oil so it doesn't get stuck. 
  2.  With an mixer, combine sugar, vanilla extract, and eggs and beat until combined. Then add in flour, baking powder and salt and stir until combined.
  3. Divide egg, sugar and flour mixture evenly into two bowls. One for chocolate and one for pumpkin. See below for instructions. 
  4. Layer pumpkin and brownie batters into the 9x9 pan, and use a knife through the batter in a zig-zag motion to create the swirl. Bake for approximately 40 minutes or until a toothpick inserted into the center comes out almost clean. Allow to cool on a wire rack prior to serving.

Chocolate Base:

  1. Melt ghee/oil and chocolate together and stirring until smooth and fully melted. You can also add cacao powder in if you decided to use it. 

Pumpkin Base:

  1. In the other bowl, add pumpkin, oil and spices to the mixture and stir until combined.
