  • 2 large eggplants
  • 1 cup Vegan marinara sauce (store-bought or homemade)
  • 8 oz Vegan mozzarella cheese
  • 1/2 cup Parmesan cheese or nutritional yeast

Directions

1. Set your oven temperature to 375°F (190°C) prior to use.

2. Cut the eggplants into rounds that are approximately 1/2 inch thick. Apply a sprinkling of salt to both sides of the eggplant slices and allow them to rest for approximately 15 minutes.
