Lucky for you, all you need for this Vitamix Thai butternut squash soup is 12 ingredients: butternut squash, onion, garlic, ginger, vegetable broth or water, sage, coconut cream, red chili pepper, turmeric avocado oil, and salt and pepper. All ingredients you may have right in your kitchen.
Go Vegan And Use Coconut Cream
Many butternut squash recipes call out for butter or heavy cream. I like to keep things healthy, and as plant-based as friendly as possible, so I want to add a little coconut cream to add some volume and taste. You can also use coconut milk to add more coconut flavor.
Add More Flavor With Roasted Butternut Squash
Roasted butternut squash brings out its caramelized butternut squash taste and flavor. If the outside of your butternut squash is starting to get dark, don't worry, we will be removing the peel. When roasting your butternut squash, you want to keep your eyes on it once in a while to make sure it doesn't get burned. You want to look for a soft or tender texture to blend in a Vitamix blender.
Go Raw When Possible
Some recipes may want you to sauté the onion and garlic. I like to keep it raw when possible because it is more nutritious when food eats raw, and it offers more flavor.

Simple And Easy Vitamix Thai Butternut Squash Soup

1 Large Butternut Squash Halves and remove seeds
1 Small Onion Any Type
4-5 Fresh Sage Leaf
2 Cloves Of Garlic
3-4 Cups Of Water/ Vegetable Broth/ Coconut Milk
1 Teaspoon of Himalayan Salt
1 Teaspoon Ground Turmeric
1/2 -1 Inch cube of Fresh Ginger
2 Tablespoon Coconut Cream
1 Red Chili Pepper Optional if you can't handle the heat
Fresh Black Pepper
Avocado Oil
Instructions
1. Preheat the oven to 400 Degree Fahrenheit. Place parchment paper in a baking pan and then put you halves of butternut squash side by side. Drizzle the inside of the squash flesh with avocado oil. Then turn the squash face down.
2. Roast for about 40-50 minutes until it is soft to tender. Make sure it is thoroughly cooked. If the outside, if your squash is starting to turn dark, don't worry because we will remove it. I recommend placing your squash on the middle rack of your oven.
3. Let your squash cool down for at least 15 minutes.
4. Chop your onion into half or quarters and place it in your Vitamix. And then add your peel garlic. Once the squash is cooled down, scoop out the flesh with a spoon and put it in your Vitamix cup.
5. Add coconut cream, salt, pepper, sage, and broth into your Vitamix cup. Place the top on and blend on high speed (or select soup preset). Stop when it's all blended and is ultra-creamy. If you would like to thin out your soup a bit more, add more broth or water.

6. Once your soup is done, pour it into your soup bowl and add a drizzle of coconut cream for taste.

Vitamix Thai Butternut Squash Soup Tips
- If you want a buttery, peppery, or fruity note, you can add a drizzle of olive oil to your bowl. You can also add olive oil into your roasted butternut squash mixture in the Vitamix cup if that is what everyone preferred. If you are going to cook your onion and garlic, you should drizzle the olive oil into your finished bowl at the end because the taste of olive oil will change when you heat it.
- If you want to add more sweetness to your roasted butternut squash soup, you can add sweet potato or a splash of maple syrup.
- If you are not a coconut flavor fan, you can use vegetable broth, water, or other nut milk like almond milk. Using nut milk will give the roasted butternut squash soup a creamy texture.
- Feel free to build texture to your soup by adding ingredients like peanut, pumpkin seeds, or shredded coconut.
- Vitamix can be costly but you can check out refurbish option. You can get a Vitamix for under $300 and this is the one that I have.
How To Store Vitamix Thai Butternut Squash Soup Leftovers
If you have leftover butternut squash soup left, leave it in your Vitamix blender cup and seal tight with a lid. You can eat the soup later, either hot or cold. If you wish to heat it again, place it on your vitamin and hit soup setting or blend at high speed. You can also heat the soup over the stove with low, medium heat with a little bit more liquid depends on thick your soup is, and you will need to stir occasionally.
