Mediterranean Chickpea salad (vegan, glutenfree)

Whenever we want a nice cold salad on a hot summer day, we always think of green salad. I don’t know about you but I get sick of it after awhile and sometimes I simply just don’t have any leafy greens in the fridge! When it comes to salad, I want something crunchy, easy to make and fulfilling! I came across this chickpea salad recipe and decided to give it a try! Check out this Mediterranean chickpea salad that is leaves free!


Serving size: 3-4

4 Pieces of organic sundried tomato
2 Cup of organic chickpeas, rinsed and drained
1 Medium organic red onion finely chopped
1 Small organic cucumber, seeded and chopped
1 Small red bell pepper, finely chopped
2 Tablespoon parsley leaf, finely chopped
1/4 Cups of olive
1 Whole organic lemon
1/4 Cup of extra virgin olive oil
Salt and pepper


  1. Mix all ingredients (Sun dried tomato, chickpea, parsley, red bell pepper, olive, red onion, and cucumber) in a mixing bowl
  2. Squeeze the lemon and pour olive oil into the bowl
  3. Add salt and pepper to taste
  4. Mix all ingredients together and well

What I love about this recipe is, it is super easy to make and tasty! Unlike other green salad, this salad can be saved and eaten as left over.

Chickpea is loaded with protein, fat ( good fat) and fiber so it will keep you full. Chickpea will also give you a number of essential vitamins and minerals while keeping you satisfied!
