Recently I went to a baking class and discovered how you can bake a perfect cookie with almond flour without the guilty feeling of eating it. And not mentioning it's super soft, moist, and chewy! Unlike most cookies, this cookie contains healthy fat, low in sugar and it contains some protein (not added protein). And for these reasons, this is the perfect almond flour chocolate chip cookies recipe for me.

Let’s talk about almond flour:

Before my cooking class, I have never seen nor known about the existence of almond flour before. Almond flour is a gluten-free nut flour that should consist of nothing, but ground blanched almonds. Isn’t this amazing?! It’s often used as a low-carb substitute for wheat flour in bread and other baked goods.

Almond flour vs. whole wheat

Almond flour is much lower in carbs than wheat flours, but higher in fat. Unfortunately, this means almond flour is higher in calories. However, it makes up for this by being incredibly nutritious. One ounce of almond flour provides you with a good amount of your daily values for vitamin E, manganese, magnesium, and fiber.

Health benefit of almond flour:

  • Rich in vitamin E, a group of fat-soluble compounds that act as antioxidants in your body. They prevent damage from harmful molecules called free radicals, which accelerate aging and increase your risk of heart disease and cancer.
  • Rich in magnesium, which could provide the benefit of improved blood sugar control, reduced insulin resistance, and lower blood pressure.
  • Almond flour may be better than conventional flours for your blood sugar, as it has a low glycemic index. Meaning it releases sugar slowly into your blood to provide a sustained source of energy.
  • Almond flour is naturally gluten-free.
  • More than 65 percent of the fat in almond flour is monounsaturated, which is excellent for maintaining healthy cholesterol levels and good overall heart health.

How to use almond flour in baking and cooking?

Almond flour is easy to bake with. In most baking recipes, you can simply replace regular wheat flour with almond flour at a 1:1 ratio.

Where to buy almond flour?

You can purchase almond flour at your local grocery store, health store or online. When purchasing almond flour, it should really only contain one ingredient: almonds.

How does almond flour taste?

Grainy with alittle sweetness and nuttiness to it. The taste is not for everyone, especially those who don’t like the taste of almond.

How to store almond flour?

Keep it in a dry and cool location. It’s best to keep almond flour in the refrigerator to preserve freshness between uses.

Almond flour substitution:

If you’re allergic or don’t like the nutty flavor of almonds, you can replace it with coconut flour but not in equal amounts. 1 cup of almond flour can be substituted for a ⅓ cup of coconut flour.

The Perfect Almond Flour Chocolate Chip Cookies (Gluten Free)

Prep Time: 15 Minutes
Cook Time: 12 Minutes

Serving Size: 8 People

Ingredients

1 1/2 Cup Almond Flour Organic
1/2 Cup Coconut Oil Extra Virgin. Can substitute with ghee.
1/2 Cup
Dark chocolate chips
1 Whole Egg Organic
1/4 Cup
Coconut Sugar Organic. If you like sweet, can go up to 1/2 cup.
1 Teaspoon
Baking soda
1 teaspoon
Himalayan Salt
1 teaspoon
Vanilla Extract

Instructions

  1. Mix almond flour, baking soda, salt, and sugar together.
  2. Beat the egg and then add into the dry mix. Then add coconut oil.
  3. Mix until completely combined.
  4. Fold in the chocolate chips. No chill needed unless you want to, you can chill for 30 minutes.
  5. Pre-heat the oven at 375 F.
  6. Scoop the batter out onto a lined baking sheet.
  7. Bake for 9-12 minutes until the edges are golden brown but the center is still soft.
  8. Remove the pan from the oven and allow to cool for 10 minutes on the pan before transferring them to a cooling rack.
