Banana Oat Walnut Bread (No Added Yeast And Sugar)

I made some super easy and delicious banana walnut bread that contains no added yeast, and no added sugar. All you need is banana, avocado oil, whole wheat flour (regular flour is fine too), baking soda, egg, oats, Greek yogurt, salt, and dates. This bread is the perfect multi-purpose bread. You can eat it on its own or make it into an avocado toast. This bread is not your typical dessert banana walnut bread that is loaded in added sugar.

The beauty of this recipe is you don't need any fancy equipment, but having a blender is a plus. Nor do you need ripe banana! Most banana bread recipe calls for ripe bananas, but what happens if you don't have a ripe banana at home? For my banana walnut bread recipe, you can use any stage of banana you want. The more ripen the banana is, the sweeter the banana bread will be. And of course, the more mature the banana bread is, the more banana flavor there will be. 

To start, mix all the wet ingredients, banana, dates, salt and baking soda in a blender. If you don't have a blender, no worries. You can mash the banana in a bowl (if you have ripe bananas, it would be easier for you to hand mash), and mix it with all wet ingredients.

Once you have all wet ingredients, blend, slowly add the flour, walnut, and oats. Make sure it's well mixed.

Once it's all mixed, pour it in your bread baking pan. Sprinkle additional oats if you would like, and place sliced banana on top for additional flavor.

Let’s talk about yeast

Yeast plays a crucial role in bread baking. It is the driving force behind fermentation, the magical process that allows a dense mass of dough to become a well-risen loaf of bread. It works by consuming sugar and excreting carbon dioxide and alcohol as byproducts.

I have to be honest, the first time I made this banana walnut bread, I didn’t have yeast at home. I did some research on yeast-free bread recipe and you can substitute yeast with other ingredients.

Let’s talk about sugar

Bread typical contains added sugar for the yeast to do its magic. For this recipe, I didn’t use any added sugar, but it does contain natural sugar from the banana and dates. This bread is not super sweet and can be used for everyday toast or eaten alone.

Banana Oat Walnut Yeast Free Bread

Cook Time 40 Minutes

Serving Size 12 Slices

Ingredients

1 1/2 Cups Whole wheat flour
2-3 Whole Banana Organic. 2 in bread and 1 for the top.
2 Whole Egg Organic
1/3 Cup
Avocado Oil Organic
1/4 Cup Greek yogurt Organic
1/4 Cup
Walnut
1/4 Cup
Oat
2 Teaspoon
Baking soda
Himalayan Salt Pinch

Instructions
  1. Mix banana, egg, avocado oil, Greek yogurt, baking soda, salt in a blender. If you don't have a blender, in a mixing bowl, mix all ingredients together.
  2. In a separate mixing bowl, mix whole wheat flour, walnut, and oats together.
  3. Slow add the dry to the wet ingredients and mix well.
  4. Oil the bread baking bowl.
  5. Pour the dough into a bread baking bowl.
  6. Bake for 40-50 minutes at 350F. If you are baking in a small conventional oven, make sure there is enough space for the bread to expand.
