Green Kiwi Smoothie

2 kiwis Peeled, Cubed
1 Whole banana Peeled
1 1/2 cups of almond milk
2 Cups Spinach
1/2 Lemon Squeezed
Toppings For your bowl
1 Sliced kiwi
1 teaspoon Chia seeds
Coconut Chips/ Sliced Almond
- Place all the ingredients in a high-speed blender or Vitamix. Blend until smooth.
- Add your toppings and serve immediately.
- Kiwis. Make sure you use perfectly ripe kiwis, or else you will end up with a tart and sour note. I like to peel my kiwis because I don't like the texture of the skin, but you can leave the skin on if it doesn't bother you.
- If you are not a fan of bananas or don't have a banana on hand, you can swap for other fruits like mango, pineapple, apple, or strawberries.
- Sweetener. If your kiwi is perfectly ripe, it will be sweet. And combined with banana, I find the smoothie to be perfectly sweetened. To make the smoothie even sweeter, you add 2-3 Medjool dates or honey.
- Nut milk. I used almond milk to make my recipe, but you can use other nut milk, coconut milk, or oat milk.
- If fresh fruits are not available, you can use frozen fruit as a substitute for this recipe. Frozen bananas and frozen kiwi may be cheaper to use and are great for summertime.
- Spinach. When adding raw spinach, make sure you wash it because fresh spinach often comes with dirt and soil in between them. If you don't have spinach on hand, you can swap for other leafy greens. You can also add frozen spinach if fresh is not available.
- Lemon substitute. If lemon is not available, you can use lime or orange juice. The citrus will add a zing to your smoothie.

How To tell If a Kiwi is Ripe
The perfect ripe kiwi has a sweet and slightly tangy to it. Otherwise, you can end up using sour and tart. The best way to see if a kiwi is ripe or not is to squeeze it gently. If it's hard, then it is not ripe. If it gives a little, then ripe and ready to be used.
If you have a hard kiwi and would like to use it soon, leave the fruit out at room temperature, and it will ripen in a day or two.
How To Store Left Over Smoothie
If you cannot finish your smoothie at once, pour it into an airtight cup, so the ingredients don't get oxidized. If you are not planning on finishing it on the same day, pour it into a popsicle mold or ice cube tray and freeze it. You can enjoy it later as a popsicle or add it to another smoothie.
