We enjoy these delicious and fluffy mini vegan coconut matcha pancakes so matcha (see what I did there)! Are you a matcha fan? If so, then you have to make these mini matcha coconut pancakes. They are vegan friendly, contains no added sugar, and you can make them within 10 minutes.

Mini Vegan Coconut Matcha Pancakes

Ingredients

1/2 Cup Buckwheat Flour (Or flour of your choice)
1/2 Cup Coconut Milk
1 Tablespoon Coconut Cream (Optional)
2 Teaspoon Matcha* See below note
1/2 Teaspoon Baking Powder
Pinch of himalayan salt
Avocado Oil For Cooking

Directions

1. In a mixing bowl, whisk flour, matcha, salt and baking powder together. Make a well in the center of the mixture and add the remaining ingredients. Whisk the batter until combined with no clumps of flour remains.

2. Grease a medium/ large size pan with avocado oil and heat it over medium-low heat. Use a spoon and scoop the batter and pour it in the pan to form mini pancakes.

3. Cook until you see small bubbles start to rise to the surface and flip it over. Cook until edges are lightly golden brown and then take it out.

Tips

  • Before adding any matcha into your mix, read below to see how much you should put into your batter. 
  • For this recipe, I used buckwheat flour. Since buckwheat flour is darker in nature, the color green is harder to appear. If you use a light flour like coconut or all-purpose, the color green will appear much easier than buckwheat or whole wheat flour.  
  • Coconut cream in this recipe is optional. It gives the pancake an extra punch of coconut flavor. 
  • If you are not a big coconut fan, you can substitute coconut milk with almond milk, hazelnut milk, oat milk, or even water. 
  • How Much Matcha To use

    The more matcha you use, the more color green will pop. However, if you never had matcha before or is sensitive to caffeine, I recommend that you start with a small amount like half of a teaspoon. Matcha contains a very concentrated amount of caffeine. If you consume too much, you could experience side effects like headaches, insomnia, irritability, heart palpitations, and diarrhea—all of which are the same side effects as overload on caffeine consumption.

    Nutritionists recommend that you drink 1-2 cups of matcha per day using 1/2-3/4 teaspoon of matcha per cup to enjoy the health benefits of matcha. But the amount of matcha you can consume will depend on you.

    What to pair with your Mini Vegan Coconut Matcha Pancakes

    These mini vegan coconut matcha pancakes go with pretty much anything. Since the mini pancakes recipe itself does not contain any added sugar and matcha is slightly bitter in nature, I recommend that you pair it with fresh fruit. Matcha also pairs well with chocolate. You can add some chocolate chips, dust cacao powder, or drizzle some chocolate sauce. And for extra sweetness and goodness, drizzle some maple syrup, honey, or date syrup.

    Matcha is the entire tea leaves that are ground up into fine powders. Unlike green tea, matcha is much more concentrated and offers a greater amount of caffeine and antioxidants.

    Every brand's matcha has a slightly different taste. Overall, matcha has a non-astringent bitterness, nuttiness, and a smooth sweetness. Some may even describe matcha to taste like grass. If this sounds like you, don't give up. It may be the way you are preparing matcha is wrong, or you may need to switch to a different brand. 

    What to look for when purchasing matcha?

    When purchasing matcha, I always look for certified organic matcha that is ceremonial grade and have third party testing done for heavy metals, microbes, pesticides, radiation, and more. This third-party testing is necessary because many farmers are exposed to industrial pollution because of their geographic location. Hence, you want to purchase from a brand that invests in testing their product to ensure you are getting the premium quality you paid for because matcha isn't cheap. Lastly, make sure to read the ingredient list on the back of the packaging to ensure that it only contains matcha green tea powder as a single ingredient and no other filler ingredients.

    When purchasing matcha that you have never tasted before, I highly recommend reading what others have to say about the taste. Everyone has a different taste preference. What is liked by a person may not be appreciated by you. If you didn't find your favorite matcha on the first try, don't give up because every brand does have a different taste, and you will find one that favors your taste buds.
