Regardless of what you want to call it, the dish is a tomato and egg stir fry in a sweet and savory sauce, and that is all you need to make this.

Ingredients

  • 3 Large Tomatoes/ 1 Pint Of Cherry Tomatoes Chopped into cubes
  • 4 Eggs (organic and pasture-raised)
  • 5-6 Tablespoons Of Ketchup or Tomato Sauce
  • 1/2 Teaspoon Salt
  • Soy Sauce (Optional)
  • Cooking Oil (Optional. Recommend avocado oil or sesame oil)
  • Green Onions (Optional, as garnish. Chopped)

Directions

1. Heat a drizzle of avocado oil at medium heat in a stir-fry pan. Use just enough to make sure your egg does not stick to your stir-fry pan. If you use a nonstick pan, you may omit using cooking oil.

2. In a bowl, beat the eggs with a pinch of salt or a splash of soy sauce. Next, pour the beaten eggs into the preheated stir-fry pan and let them cook for a minute. Begin scrambling the eggs once they are no longer runny.

Achieving smooth and silky eggs is the key to perfection in this dish. Once the eggs have taken shape and possess a glossy center, it's time to remove them from the pan. Remember, they will be cooked once more in the flavorful sauce later, ensuring they reach the ideal texture and consistency.

3. Once the eggs become soft scrambled eggs, remove them into a bowl and let them rest. Add tomatoes to the same stir fry pan and let it cook until it becomes soft and juice comes out.

4. Combine the stir-fried tomato with scrambled eggs, ketchup, and a pinch of salt in the stir-fry pan. Stir the mixture thoroughly and allow the tomato egg to cook for 5-6 minutes until the sauce thickens. At this stage, it's recommended to taste the dish and make any necessary final adjustments to the salt or add more ketchup if desired.

5. Scoop the tomato egg, stir fry into a pan, and sprinkle chopped green onions on top to make a beautiful presentation. However, you can omit the ingredient if you are not a green onion fan.

No ketchup? No problem! 

If you happen to be without ketchup, there's no need to worry. You can easily substitute it with marinara sauce or tomato paste. These alternatives will infuse the dish with a rich tomato flavor and enhance its overall taste. Additionally, they will contribute to a thicker, creamier texture rather than a watery consistency.

The Cooking Oil

Different cooking oil will contribute different flavors to the tomato egg stir fry dish. Traditionally this dish is stir fried with vegetable oil. Vegetable oil isn't very healthy for you when heated, so I always swap for avocado oil instead. For a toasty and nutty taste, opt-in for sesame oil.
