Ingredients

Graham cracker crust

  • 1 ½ cups of vegan graham cracker crumbs (you can also use gluten-free graham cracker crumbs)
  • 6 tablespoons of melted vegan butter or coconut oil
  • 2 tablespoons of maple syrup (optional for added sweetness)

For the filling

  • 3 ripe avocados, pitted and peeled
  • 1 cup of coconut cream
  • 1/2 cup of freshly squeezed key lime juice
  • 2 key limes zest
  • 1/2 cup of agave syrup or maple syrup
  • 1 teaspoon of vanilla extract

For the topping

  • Whipped coconut cream or vegan whipped topping (optional)
  • Slices of key lime for garnish

Directions

Pie Crust

1. Preheat your oven to 350°F (175°C).

2. Put full sheets of graham crackers in a food processor or blender. You can also crush them in a zip lock bag with a rolling pin.

3. In a mixing bowl, combine the graham cracker crumbs, melted vegan butter or coconut oil, and, optionally, maple syrup. Stir until the mixture reaches a sandy, moist consistency.

4. Evenly distribute the crumb mixture into a 9-inch pie dish, firmly pressing it onto the bottom and sides to create a uniform crust. Use the back of a spoon or a flat-bottomed glass to press it down firmly.

5. Place the crust in the preheated oven and bake for approximately 10 minutes or until it turns a golden brown color. Once done, carefully remove the crust from the oven and allow it to cool completely before proceeding.

Filling

1. Combine the ripe avocados, coconut cream, key lime juice, lime zest, agave syrup or maple syrup, and vanilla extract in a blender or food processor. Blend until smooth and creamy.

2. Taste the filling and adjust the sweetness or tartness as desired by adding more agave syrup or lime juice.

3. Pour the avocado key lime filling into the prepared pie base. Use a spatula to help spread evenly and put it in the freezer for at least 1 hour or 4-5 hours in the fridge. Make sure the pie is covered with food wrap. If you put it in the refrigerator, you must wrap the vegan key lime pie tightly so the avocado's color doesn't oxidize.

4. Once the tart has firmed up, it is ready to be served. If you put it in the freezer, let it thaw out for about 10-15 minutes before serving. If you like the frozen texture, you can eat it earlier. Once you are done serving, put the remaining leftovers back in the freezer. Otherwise, the filling will get soft.

5. Just before serving, you can top the vegan key lime pie with coconut whipped cream or your favorite vegan whipped topping. Garnish with slices of key lime for an extra touch of freshness.

Tips

Choose ripe avocados: Make sure your avocados are perfectly ripe, as this will ensure a smooth and creamy texture for the filling. The avocados should have a gentle softness when touched and yield slightly when pressed.

Use fresh key lime juice: Squeeze fresh key limes to extract their juice for the most vibrant and tangy flavor. It's worth the extra effort compared to using bottled juice.

Adjust sweetness and tartness: Before pouring the filling into the crust, take a moment to taste it and adjust the sweetness and tartness to your liking. If desired, add additional agave syrup or lime juice to attain the ideal balance of flavors.

Chill the pie thoroughly: To achieve the best consistency and allow the flavors to meld together, refrigerate the vegan key lime pie for at least 4 hours, or preferably overnight, before serving. This will ensure that it sets properly and becomes firm enough to slice.

Store properly: Store any remaining Vegan Key Lime Pie in an airtight container in the refrigerator. Consume within 3-4 days for optimal freshness.

How To Store Leftovers

To maintain the freshness of the leftover Vegan Key Lime Pie, place it in an airtight container or tightly cover it with plastic wrap. This will safeguard it against drying out and absorbing any undesirable flavors from the refrigerator. For optimal taste and texture, enjoying the pie within 3-4 days of preparation is recommended; after this period, there may be a decline in both texture and flavor.

If you anticipate not consuming the leftover pie within a few days, an alternative option is to freeze it. Ensure each slice is tightly wrapped in plastic wrap, and then place them in a freezer-safe container or zip-top bag. The frozen slices can be stored in the freezer for up to 2-3 months. When you're ready to enjoy them, simply transfer the desired number of slices to the refrigerator and allow them to thaw overnight. Alternatively, you can thaw them at room temperature for a few hours.

Ingredients You Will Need To Make Vegan Key Lime Pie

Graham Crackers

Vegan graham cracker crumbs serve as the crust's base, adding a sweet and slightly nutty flavor to complement the tangy filling. You can find vegan graham cracker crumbs at specialty grocery stores or make your own using vegan graham crackers.

Coconut Oil/ Vegan Butter

Melted vegan butter or coconut oil is used to bind the graham cracker crumbs together and create a firm crust. They add richness and help achieve a crisp texture.

Fresh Avocado

Ripe avocados serve as the star ingredient in this recipe, adding a creamy texture and a healthy dose of good fats. Avocados are a nutrient powerhouse, rich in vitamins and minerals that contribute to overall health and well-being.

Coconut Cream

Coconut cream provides richness and a luscious texture to the filling. It is extracted from mature coconuts and adds a subtle coconut flavor to the vegan key lime pie. Look for canned coconut cream, which has a higher fat content and creamier consistency compared to full-fat coconut milk.

Fresh Lime Juice

Key lime juice is made from small, tangy key limes, which have a distinct flavor compared to regular limes. Freshly squeezed key lime juice adds a delightful tartness and a refreshing citrusy taste to the vegan key lime pie.

Agave Syrup or Maple Syrup

Agave syrup, derived from the agave plant, and maple syrup, made from the sap of maple trees, are both natural sweeteners used to infuse the filling with a delightful touch of sweetness. Both provide a pleasant sweetness without overpowering the other flavors.

Salt

Adding a small amount of salt to the vegan avocado key lime pie recipe can help enhance the overall flavor and balance the sweetness. Salt has a unique ability to heighten taste sensations and bring out the ingredients' natural flavors.

Vanilla Extract

A small amount of vanilla extract enhances the vegan key lime pie's overall flavor profile, adding a hint of warmth and depth to the filling.

How to elevate this vegan key lime pie

Toasted coconut flakes

Sprinkle toasted coconut flakes over the vegan key lime pie or as a garnish on top of the coconut whipped cream. Toasting the flakes brings out their natural nutty flavor and adds a delightful crunch to each bite.

Drizzle with a raspberry or strawberry sauce

Prepare a quick and easy sauce by blending fresh raspberries or strawberries with a touch of sweetener. Drizzle it over the vegan key lime pie slices for a burst of fruity goodness and a pop of vibrant color.

Add a touch of fresh mint

Garnish each slice with a few fresh mint leaves for a refreshing herbal note that complements the tanginess of the key lime.

Create a nutty crust variation

Feel free to explore a variety of crust options to introduce diverse textures and flavors to your pie. Instead of graham cracker crumbs, you can use crushed nuts (such as almonds or walnuts) or a combination of nuts and dates for a deliciously nutty and naturally sweet crust.

Infuse the filling with additional flavors

For a unique twist, consider adding a hint of other complementary flavors to the filling. You could incorporate a small amount of matcha powder for a green tea twist or a dash of coconut extract for an extra tropical touch.

Opt for sweetened condensed coconut milk

Using sweetened condensed coconut milk or other vegan sweetened condensed milk in your Vegan Key Lime Pie can be a fantastic option to add richness, sweetness, and a creamy texture to the filling. Sweetened condensed coconut milk is a condensed form of coconut milk that has been sweetened with sugar or other natural sweeteners.

Frequently Asked Questions (FAQ)

Can you taste the avocado in the pie?

Yes, you can taste a subtle hint of avocado in the pie. However, the key lime juice, lime zest, and other flavors like sweeteners and vanilla extract help balance and complement the avocado taste. The delightful flavor profile of this pie encompasses a harmonious blend of creamy richness, tangy zest, and refreshing citrus notes.

Can I use regular limes instead of key limes?

If you cannot find key limes, regular limes can be used as a suitable substitute for this recipe. Key limes have a slightly different flavor profile, being more tart and aromatic compared to regular limes. However, regular limes will still give the pie a tangy and refreshing taste.

Can I use a different type of crust?

Absolutely! While graham cracker crumbs are commonly used in traditional key lime pie, you can get creative and use different crust variations. Crushed nuts (such as almonds or walnuts) or a combination of nuts and dates make great alternatives. Experiment with flavors and textures to find your favorite crust option.
