Roasted cauliflower is typically appreciated as a hearty Winter dish. However, it doesn’t have to be. Today I'm going to share with you my favorite roasted mint lime cauliflower salad. It is gluten free and it is vegan friendly.
With the use of different color variety cauliflowers, fresh lime juice, ginger, jalapeno, and mint, it will brighten your plate with the flavor of summertime. Most grocery stores carry at least one color cauliflower. The most common cauliflower in the grocery store is white colored. Other colors, varies from white, green, orange and purple.
You might be asking which cauliflower is best? There is no one color that is best! The different colors deliver different nutrients. Below is each color with its corresponding nutrients:
Orange cauliflower: Gets its color from beta-carotene as the orange pigment. This colored cauliflower is great for eye health.
Purple cauliflower: contains anthocyanin, an antioxidant which is also found in red cabbage and red wine. This is great for preventing heart disease.
Green cauliflower: is also known as broccoflower– part cauliflower and part broccoli. Sweeter in taste than white cauliflower and has some of the broccoli’s chlorophyll.

Cauliflower is delicious no matter how you prepare it. Raw, steamed, and roasted. This roasted mint lime cauliflower is easy to prepare, only a few ingredients are needed and no special technique is required! Great way to impress your family, friends, and guest with this easy and colorful dish. And this dish is vegan and gluten-free friendly.
Note: This dish could be served hot or cold.
Mint Lime Cauliflower Salad (Vegan and Gluten Free)

Serving Size 4 People

Ingredients
1 Cup Purple cauliflower Floret
1 Cup Green cauliflower Floret
1 Cup White cauliflower Florent
1 Cup Orange cauliflower Floret
1 Whole Lime organic
8-10 cup Mint Leaves Fresh, chopped
1 tbsp olive oil Extra virgin
1 tbsp Lime juice Organic, fresh
1 tsp Ground ginger organic
1 tsp Ground jalapeno pepper organic
1 tsp Himalayan Salt
Instructions- Floret all the cauliflower. Slice the lime the circular way. Chop the fresh mint.
- In a mixing bowl, mix cauliflower with salt, ginger, jalapeno pepper, lime juice and olive oil.
- Place the sliced lime in an oven pan. Place the mixture in the pan around the lime. Then sprinkle some fresh mint on top.
- Pre heat the oven at 425 degrees and roast it for 10-15 minutes.
