How To Pick The Perfect Cauliflower?

The perfectly ripe cauliflower is firm and tightly closed with no dark spots or discoloration. The white-colored variety should have a very pale or ivory.

The brown spots on the head cauliflower are caused by oxidation. The longer you store the cauliflower, the more brown spot there will be. But the good news is you can still cook with this cauliflower as long as the spots have turned a dark color or have a mushy texture. If you want to remove the brown spots, you can simply use a knife and scrape off the brown areas or trim.
