Ingredients

  • 1 whole wheat or multigrain bagel
  • 4-6 ounces of cooked salmon fillets (grilled, baked, or poached)
  • 1 sunny-side-up egg
  • 1/2 avocado, sliced
  • 2-3 stalks of celery, thinly sliced
  • 4-5 black olives, pitted and sliced
  • 1 tablespoon Greek yogurt or light mayonnaise
  • Fresh Lemon juice
  • Salt and pepper to taste
  • Olive oil (for cooking)

Directions

1. Horizontally split the whole wheat or multigrain bagel, creating a top half and a bottom half. Lightly toast the bagel for a satisfying crunch.

2. In a medium bowl, add the cooked salmon and use a fork to flake the cooked salmon into small pieces, ensuring even distribution throughout the sandwich. Then add sliced celery, olives, yogurt, a squeeze of lemon juice, and salt and pepper. Mix until well combined.
