Delicious rocky road vegan oatmeal that you would want to make over and over. You only need five ingredients, and within 10 minutes, you will have a scrumptious bowl of oatmeal that you won't want to share. It is chocolatey, creamy, and gooey.

Rocky road is a famous ice cream flavor made with chocolate ice cream, marshmallows and nuts. You can use any type of nuts or a combinations to make a rocky road. Some common nuts that are used in rocky road flavors include almond, walnut, hazelnut, peanut, and pecans. For this recipe, I only used pecan but feel free to use your favorite nuts. 

Rocky Road Vegan Oatmeal

Ingredients

1 Cup Water/ Almond Milk
1/2 Cup Oats (I used steel cut but feel free to use your favorite type)
1 Teaspoon Raw Pecan Pieces
~ 1 Teaspoon Dark Chocolate Chips
~ 10 Pieces of Small Marshmallows (Vegan friendly)
Cacao Powder For Dusting (Optional)

Instructions

1. In a small pot, bring one cup of water to boil. Once it's boiling, add in oats of your choice and cook according to box instructions.

2. When it is close to being done, add in the majority of your chocolate chips and marshmallows. Save some pieces on the side as the topping. Stir until your chocolate chips and marshmallow are melted in with your oatmeal.

3. Once it's done, pour into a bowl. Add your toppings: chocolate chips, marshmallows, and broken pieces of pecans.

Tips For Making Rocky Road Vegan Oatmeal:

The Oats

You can use any type of oat to make this recipe. I used steel cut, but you can use quick oats or rolled oats.

Chocolate chips

My favorite part of the rocky road is the rich chocolate. You can either use chocolate chips or cacao powder to add rich chocolate flavor to your oatmeal. If you are a dark chocolate fan, cacao would be a better option for you, or you can also opt-in for dark chocolate chips with no added sugar.

Marshmallows

Not all marshmallows are vegan friendly because the traditional ones contain gelatin in them unless they indicate it is vegan friendly. This is the vegan marshmallows I used. If you aren't able to find mini marshmallows, you can dice the larger ones. 

Go Nutty

Depends on how nutty you want it, you can use one type of nut or a combination of nuts. It is up to you. For this recipe, I used crushed pecans. If you are looking for a healthier option, go for the raw nuts. Raw nuts have more nutrients than roasted, and it also doesn't contain any additives like salt and flavors.
