Homemade savory butternut squash bread is a unique fall twist to your bread. It is super easy to make and quick bread you can bake in under an hour. No yeast involved, no kneading, and no waiting for it to rise. This bread is soft and moist, almost like a cake texture.

I love this savory butternut squash bread recipe because you can use leftover squash soup and turn it into delicious bread. For this recipe, I used my leftover Vitamix Thai butternut squash soup. We all have those days where leftover just seems just unappetizing, or we simply had enough. Instead of letting it sit in your fridge and hope that someone in your household will eat it before it goes bad, make it into delicious butternut squash bread that the whole family can enjoy. You can make this recipe with any leftover squash. Whether it is leftover oven baked squash, mashed squash, or squash soup, you can turn your leftover into bread. 

Tips For Making Savory Butternut Squash Bread

Use Leftovers

I love using leftovers to make this savory butternut squash bread because no food should ever go to waste. You can use leftover baked squash, mashed squash like mashed butternut squash, or even squash soup. If you are planning on using leftover squash soup, make sure your soup isn't too watery. It should be the super thick and creamy kind.

If you don't have leftover baked squash on hand, don't worry, you can still make this recipe. You can either pop in some squash in the oven or use a puree.

The Squash

You can use any squash type such as pumpkin, acorn, or kabocha squash to make this bread. You can even use a squash blend!

Bread Spices 

If you are going to use leftovers, the chances are you probably have already spice it up from previous cooking. That is perfectly fine. I recommend that you add more spices into your recipe because with adding other ingredients and baking, I notice all the spice flavors do tone it down. So whatever you taste now is going to be more subtle when the bread is baked. What additional spices to add, I will leave that up to you. Either add spices that you have already used in your leftover or something that pairs well with the seasoning you used previously.

I put my suggested additional spices to use below, but it is optional. If you are using plain squash puree, you can double the amount. 

Savory Butternut Squash Bread

Prep Time: 10 Minutes
Cook Time 45 Minutes

Serving Size: 12 Slices

Ingredients

3 Cup of All Purpose Flour
2 Cups of Squash Puree/ Thick Butternut Squash Soup
1 Egg
1 Tablespoon Pumpkin Seeds
2 Teaspoon Baking Soda
1/4 Cup Avocado Oil

Optional Spices (if you are going to use puree with nothing in it, double the spice level):
1/2-1 Teaspoon Herb Of Your Choice (Basil, Rosemary, Sage)
1/2 Teaspoon Ground Garlic Powder
1/2 Teaspoon Ground Onion Powder
1/4 Teaspoon Paprika
1/4 Teaspoon Himalayan Salt

Instructions

1. In a large mixing bowl, pour in all your wet ingredients (avocado oil, puree, and egg). Whisk until it is mixed well.

2. Add in your dry ingredients and optional spices into your wet mixture. Mix well, and make sure it should have no lumps.

3. Either grease your bread baking pan or place a parchment paper. Pour in your batter and add your topping: pumpkin seed.

4. Place in the oven and bake at 375F degrees for 40-45 minutes.

5. Remove from the oven and place it on a cooling rack.

Serve it with your favorite fall soup and stew, eat it as toast with some creamy cream cheese, or use it to make a perfect fall sandwich. This bread has a subtle savory flavor, so this means you can eat it with pretty much anything. 

How To Store Your Savory Butternut Squash Bread

Like most baked goods, this loaf of butternut squash bread should be stored in the fridge. If you aren't planning on eating it for a while, you can keep it in the freezer until you are ready to eat it.
