Everything Bagel Cashew Butter Shrimp Udon Noodle Recipe

One of my favorites go-to meal, when I am busy and is on a budget, is udon noodles! Udon noodles are super affordable and super easy to cook. In minutes, you will have fluffy, soft, and chewy noodles that are ready to be served.  They’re super fun to eat, and they also grab a great sauce like nothing else. My favorite sauce to with them is a nutty, sour and spicy sauce. Which you will learn how to make in this post.

What is udon noodle?

Udon noodle is a thick wheat flour noodle that is often used in Japanese culture. This noodle is usually served in flavorful broth.

Cashew Butter Udon Noodle Recipes

Here are some main ingredients you will need to make this dish and tips on how to choose the better option:

Cashew butter

Cashew butter is one of my favorite nut butter, and you can substitute it with your favorite nut butter. This dish can be made with other nut butter and still taste amazing!

When choosing a nut butter, be sure to read the ingredients:

  • Read the sugar and salt content. You want to avoid added sugar and salt.
  • Look for an organic and single ingredient.
  • Read trans and saturate fat content.

Udon Noodle

Udon noodles can be brought as fresh, frozen or dried. And there’s no shame in dried.

Fresh-frozen noodles often come portioned and will last for months in your freezer. Dried noodles, generally is the cheapest option, can keep even longer in your pantry. Personally, I like fresh-frozen noodles because of the texture and taste is much better. Dried ones for some reason just doesn't do the job.

When shopping for udon noodle, look for simple ingredients. Udon noodles ingredients should only be wheat flour, water, and salt.

Your choice of protein To add

For this recipe I used shrimp but you can add your protein of your choice. Some of my recommended includes tofu, chicken and beef. It will go really well with this nutty flavor.

Is Udon noodle healthy?

If you are not familiar with udon noodle, this type of noodle is made from wheat flour. This means if you are someone who is struggling with insulin resistance or gluten, udon noodle may not be the food for you.

If you consume whole wheat flour udon, you get a significant dose of complex carbohydrate, which is higher in fiber and digested more slowly by the body than simple carbohydrate. For you are someone who worries about your figure, then you would want to reach for complex carb rather than refined carbs. You are also getting a significant dose of fiber and protein.

Udon noodle typically is made up of only three ingredients: flour, water, and salt. Because there is no added fat or other ingredients, it makes them light and easy to digest. This doesn't mean you should go crazy on them!

Cashew Butter Udon Noodle Recipe

Cook Time 10 Minutes

Serving Size 2 People

Ingredients

2 260g Udon Noodle I use frozen
2-3 tbsp
Cashew butter
5 tbsp Hot water
tbsp
Balsamic Vinegar
2 Clove of garlic
1/2 lb Shrimp
1/8 Cup Frozen Peas
1/8 Cup Frozen Corn
1 tsp
Himalayan Salt
1 tsp Hot sauce optional
1 tsp
Everything bagel sprinkle optional
Avocado Oil 

Instructions

  1. Boil udon noodle according to direction.
  2. In a stir fry pan, sauteed garlic in avocado oil and then throw in the deveined shrimp. Add salt.
  3. Let the shrimp cook until close to being fully cooked then throw in the frozen corn and peas.
  4. In a serving bowl, mix the cashew butter with hot water from the udon broth. Mix until smooth. If you want to a creamier sauce, you can either use less water to thin it out or add more cashew butter.
  5. Once the cashew butter is thin down and it is smooth, add balsamic and siracha. Mix well.
  6. Add cooked udon noodle and mix well.
  7. Once the shrimp is cooked, add on up of the udon. Sprinkle some "Everything bagel" topping for some fun texture and taste.
