Ingredients

  • 2 ripe avocados
  • 1 cup oat milk (or any plant-based milk of your choice)
  • 2 tablespoon maple syrup or sweetener of your choice
  • 1 tablespoon dark chocolate chips Extracts for dipping
  • 1 teaspoon vanilla extract
  • Pinch of Salt
  • Chopped nuts (optional)

Directions

1. Combine avocado, oat milk, maple syrup, lime juice and a dash of salt in a blender until the mixture achieves a creamy texture. Then add the dark chocolate chips and blend again for a few seconds, depending on how finely you want them chopped. For a textured feel, blend for a shorter period, and for a finer texture, blend for longer.

2. Transfer the blended mixture to your popsicle molds and insert wooden sticks. Place them in the freezer for a minimum of 4 hours or, ideally, overnight to achieve optimal results.

3. Dip the frozen paletas into the chocolate sauce to add a chocolate coating. Be aware that the chocolate may freeze quickly on the popsicle, so add any toppings quickly!

4. Once you have finished decorating the popsicles with toppings, put them on a wrap or drying rack, and return them to the freezer for about 30 minutes before serving.

A helpful tip for removing the paletas from the popsicle molds is to submerge the tray in warm water for 3-4 minutes. This will help loosen the paletas from the popsicle molds. Next, carefully tug on the popsicle sticks to release the paletas. If they are still difficult to remove, continue to run the mold under warm water until they come out easily.
