As milk has sort of gone out of style and it’s affecting many dairy farms including Elmhurst Dairy. Elmhurst Dairy first opened its doors in Queens, New York, in the 1920s and has been supplying the metropolitan area with cow milk for nearly a hundred years. With ongoing losses, Elmhurst Dairy had a rebirth and decided to become a plant-based milk company now called Elmhurst Milked. Swap cows for nuts!
So what exactly is nut milk? With Dr. Cheryl Mitchell’s research, she was able to “unleash the protein and all of the nutrients in grains, nuts, and seeds using only traditional fermentation methods. The result was the transformation of this plant-based food into ready to consume, deliciously creamy, natural plant milk having essentially all the nutrients and superior digestibility of the starting material”. According to the company, this nut milk does not contain any thickeners, emulsifiers, stabilizers or oils. It is completely all natural. This is perfect news for us clean and healthy foodies.
There are many reasons why one may choose to go for plant-based milk over conventional dairy milk. Whatever the reason is, be it personal, ethical or health-related – here are some quick facts:
